Chocolate Cake with Chocolatey Orange Zest Frosting

This cake has become our go to cake during March Birthdays. March is a major Birthday month in our family....so cake....practically becomes its own food group! This spicy chocolate cake is complimented perfectly by the sweet orange flavor of the chocolate frosting. Hope you enjoy our recipe for Chocolate Spice Cake with Chocolatey Orange Frosting.

Difficulty Meter: Medium

Prep Time: 15-20 mins Cook Time: 35-40 mins Frosting Time: 15-20 mins from making to spreading

*Chefs Tip: Block out a solid 2 hours to make this cake...just to not feel rushed.

Ingredients For a 2 layer Cake:

3 cups All Purpose Flour

6 heaping tablespoons unsweetened coco powder

1  3/4 cup light brown sugar tightly packed

1 teaspoon baking soda

1 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon cayenne pepper (you can lessen to 1/4 tsp if you aren't feeling the heat)

1/2 teaspoon ground cloves

12 tablespoons canola or vegetable oil

3 tablespoons white vinegar

2 teaspoons orange extract (If you don't have the orange extract, vanilla extract will work too)

2 cups cold water + extra if batter is to thick

Frosting :

1/2 cup powdered sugar

1/2 cup unsweetened coco powder

1 stick salted butter

2 3.5 oz chocolate bars ( preferably Intense Orange Lindt Excellence Bar) but if not use regular dark chocolate and add 2 Teaspoons orange zest.

1/2 teaspoon orange extract

Serves :10-12

Pre- Heat oven to 350*degrees.

Combine all dry ingredients except flour in a good sized bowl.

*Chefs Tip: We highly recommend sifting the baking soda as it is prone to clumping...and trust us no one wants a little ball of baking soda in their piece of cake. Also, if you are feeling like you want nothing other than perfection...go ahead and run all dry ingredients through the sifter. Side note: Use a sifter larger than the one shown above 🙂

Add oil, vinegar and orange extract to the dry ingredients give it a good stir. Incorporate cold water and slowly mix.

Once the water is whisked in start incorporating the flour one cup at a time.

When you are finished adding all ingredients and mixing to a thick pancake like consistency....oil two 9 1/2 x 2 inch pans and distribute batter evenly.

Bake cakes for 35 mins or until a toothpick comes out clean.

Let cake stand in its pan for about 10 minutes then transfer to cooling racks.

As cake cools, on a double boiler...melt butter and chocolate add orange extract... then slowly sift in powdered sugar and coco powder.

Layer a little less than half the frosting on the bottom layer of cake.

Put second layer on top and finish frosting 🙂

Garnish with orange slice.

Light a few candles and grab a slice.

Bon Apetité!
