One of our favorite quick and easy autumn (and all year long) desserts has always been apple crisp...Mom always made them and now we find ourselves making them too. This one Jenneka created with a festive twist. Dried cranberries and pecans add a savory tart quality...perfectly balancing sweet apples. We recommend using macintosh, pink ladies, fuji, but really any variety will work:-)
Difficulty Meter: Easy
Prep Time: 15-20 mins Cook Time: 30-40 mins or until bubbly and golden brown
Pre-Heat oven to 350* degrees
Ingredients:
Filling:
8 medium sized apples
2 heaping tablespoons brown sugar
1 heaping tablespoon cane sugar
1/8 teaspoon nutmeg
1/8 teaspoon ground clove
1/2 teaspoon cinnamon
juice of 1 lemon
*Chefs Tip - After apples are tossed in above ingredients sprinkle a bit more of each sugar on top of apples for a touch of extra sweet.
Topping:
1 - 1/2 cup all purpose or gluten free flour
3/4 cup light brown sugar
1/3 cup cane sugar
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon clove
1 - 1/2 sticks chilled salted butter cut into cubes
1/2 heaping cup pecans (more if you are feeling extra nutty)
1/2 cup dried cranberries
We are blessed to live relatively close to a variety of apple orchards...so after one of our adventures it was only fitting to use a bit of the collected bounty.
First slice apples into a 2 quart baking dish.

Nalo, Muddy, and Kelly definitely tasted the apples and are always ready to help cook.
Next, sprinkle the apples with sugar and spices.
Squeeze the lemon juice over the apples.
Toss apples to mix ingredients with the lemon juice and sprinkle a little extra sugar on top for good measure 🙂
For the topping break apart or chop up pecans and add all ingredients in a medium mixing bowl.
Mix ingredients with a fork or your hands (like Jen) to create a coarse crumbly consistency.
*Nalo had to keep his nose in things just to make sure we were using all the freshest and finest ingredients.
Pop into the pre heated 350* oven and let it get all yummy for about 30-40 minutes. When it is golden and a bit bubbly this Cran Pecan Apple Crisp is ready to serve!
Although this is a stand alone dessert, we especially enjoyed serving this crisp with Talenti's Vanilla Chai Ice cream. It really rounded the flavors although a traditional vanilla, salted carmel, or butter pecan works well too.
