Tis the season.....Harvest season that is (we are a bit later on some things this year....so we are still collecting, eating and preserving! Hahaha). These super easy refrigerator pickled jalapeño peppers are our go to way in which we make the most of our spicy harvest so we can enjoy in the winter months to come! (Hello traditional New Years Eve - Build Your Own Sandwich Night - oh yeah...it's been a thing in our family for a very long time and probably one of the reasons why we started making our own "pickled peppers.")
So without any further ado.....
Difficulty Meter: Very Easy
Prep & Cook Time : about an hour
Ingredients:

Here we go:
4 cups white vinegar
2 cups water
2 tablespoons coarse salt
2 tablespoons organic cane sugar
2 tablespoons whole peppercorns
1 large or 2 small cinnamon sticks
1 teaspoon whole cloves
2 teaspoons whole allspice
1 teaspoon whole mustard seeds
1 teaspoon whole coriander
Bring vinegar, water and spice mix to a boil. Let cool.
Slice peppers into desired bite sized pieces. Put into a sealable jar.
Pour cooled brine over peppers.
Seal and place into fridge to marinate for at least a week. And that’s it…. Super easy!!!
