Jalapeño Poppers + Simple Ready in minutes Garlic Shrimp.

Although this spicy recipe has a few steps, when everything is combined....we guarantee it is well worth every moment of prep! Who could resist the combination of shrimp, bacon and cheese?!?!


Difficulty Meter:

Shrimp: Super Simple

Jalapeños : Intermediate


Makes: 20-24 poppers

Shrimp: serves around 8 (or if you are us....3 :-)


Prep Time: 45-60 mins


Cook Time: 7 mins or until golden brown.


Ingredients for Simple Garlic Shrimp:

2 lbs shrimp (we used a wild caught large red Argentinean variety.)

2 Tablespoons Butter

6-8 cloves of garlic (crushed and chopped into bits- if you have a garlic press this would be a very helpful time to use it:-)

Salt & Pepper to taste


Ingredients For Jalapeño Poppers:

10-12 Jalapeños

20-14 strips of raw bacon

20-24 toothpicks

large pot or fryer

canola oil for frying

chives for garnish (optional)

Stuffing:

7-8 simple ready in minutes garlic shrimp

1 1/2 cups sour cream

1 cup shredded smoked or truffle Gouda cheese

1/2 cup Brie cheese chopped into pieces

1 teaspoon ground pepper

1/2 teaspoon salt

Batter:

1 cup cornstartch

1/2 cup old bay seasoning

1/2 cup unsweetened almond milk (*Jared's Chefs tip* eyeball it until pancake batter consistency)


Step 1: The Shrimp

Sauté shrimp in garlic and butter until cooked through (about 6-8 mins). We highly recommend cooking shrimp in a cast iron skillet for added flavor! The leftovers are great right out of the pan...or in pasta or salad!

Jared is all in favor of right out of the pan eating!

Just make sure to reserve 7-8 shrimp and some of the extra garlic for the jalapeño popper filling.


Step 2: The Filling

In a bowl, add sour cream, shredded smoked gouda, and chopped brie cheese.

Add in chopped shrimp, salt and pepper.

Step 3 : The Jalapeños

Cut jalapeños in half length wise. De-seed....please use caution (unlike Jared) while taking seeds out- seeds and oils can get on your hands and create a very warm if not burning sensation. Remove with knife or spoon to avoid getting on hands.


Step 4: The Batter

In bowl, add corn starch, old bay and unsweetened almond milk. Combine until a loose pancake batter consistency.

Step 5: Compiling & Cooking

Start by filling jalapeños with cheese mix. Be sure to not overstuff as it will spill out while frying.

* Tip* If you happen to have any leftover stuffing....reserve to dip poppers in or add to extra shrimp for a tasty pasta dish the next night :-)

Wrap in bacon strip. You want to make sure it covers from end to end so it keeps filling in tacked.

Secure with toothpick. Once all peppers are stuffed and wrapped in bacon. Start dipping in the batter and lower into hot oil.

Let cook 6-8 mins or until golden brown.

Step 6: The Eating

Try to let these tasty treats cool off a bit before enjoying!
